An Israeli dinner to toast our Kosher wines

Not only Kosher-certified organic wines, but a true and understood experience based on values of integration, unity and vision.

Starting in 2021, we began producing Kosher wines. Kosher certification is a type of food certification that is obtained after a long process of inspection by a specialized rabbinic body, which verifies that the wine production in the winery conforms to strict Jewish dietary rules. According to Jewish tradition, wine is used to sanctify the Sabbath (Shabbat), the holiday of rest, which is observed every Saturday from sundown on Friday to sundown on Saturday, in addition to other religious holidays. Only if the precise rules of Kasherut, the set of rules that teach what foods are permitted and how they should be prepared, following the teachings of the Torah, both in the cultivation of the vine and in winemaking, have been followed, will the food or drink in question Will be able to be certified Kosher. Also, it should be remembered that a Kosher wine may cease to be Kosher if it is not opened and served by an observant Jew, as it would lose its sacredness.

Achieving certification has involved a great deal of effort and attention from our entire production and winery team. From the moment the grapes arrive at the winery to the moment the bottle is corked, the raw materials and winemaking tools, the bottling machines and the various machines that follow the packaging cannot in any way come into contact with people who do not profess Judaism and who are not practicing Jews.

Precisely in order to comply with these strict rules in our winery, there has been a constant presence of a Rabbi and a young man, Assaf; of the Jewish religion, who, flanked and guided by our winemaking and production team, have carried out every step of the winemaking and bottling process.

The wines that will obtain Kosher certification again this year are Prosecco DOC Extra Dry sparkling wine, Pinot Grigio sparkling wine DOC delle Venezie "M-use" and two red wines without added sulfites, "Rosso Convento" IGT Veneto and Cabernet IGT Veneto. Wines that will fly to Israel in January ready to be consumed.

  • ISRAELI DINNER DISHES

To celebrate this great achievement we organized together with Assaf, a dinner of typical Israeli dishes, a journey through scents and spices that excellently accompanied Pizzolato Kosher wines:

  • Msabbaha, a cream of chickpeas and Tahina prepared with garlic, lemons, parsley and olive oil;
  • Pita, Arabic bread made only with flour and dehydrated brewer's yeast;
  • Falafel, fried patties made from chickpeas. The ingredients used for preparation were: chickpeas, onions, garlic, parsley, baking soda, lemons and eggs;
  • Tabule salad, a typical Arab dish made with bulgur, pomegranate, tomatoes, spring onions, parsley and mint;
  • Onion and sumac salad.

The bubbles accompanied the salads, enhancing the acidity of some ingredients and in some cases the aromaticity. Dishes that like Prosecco can be served as an entrée at the beginning of dinner to whet the appetite.
The extreme succulence and elegant red fruit notes of the sulfite-free wines created an overpowering balance with the slightly spicier chickpea-based dishes.

To end our dinner we had Malabi, Arabian panna cotta, strictly home-made with milk, fresh cream, white sugar, cornstarch, rose water, lemons, salted peanuts, coconut flour, and mint herbal tea.

During dinner we paired each dish with a Kosher wine: it was definitely a completely new, stimulating and satisfying experience that led us to discover new flavors and cultures.
