"Food Pairing" - 2 heartwarming recipes paired with our Novello 2023 to welcome the arrival of autumn

Autumn has arrived like a painter to paint the landscape, turning every shade of green into an explosion of warm colors and enveloping atmospheres!

In this season of change, as the days grow shorter, nature shines with golden light, inviting us to slow down and enjoy every moment, we find inner stability in the warmth of autumn dishes. We therefore propose 2 recipes to pair with our Novello PIWI 2023, to give you a moment of nostalgia and reassurance.

On the occasion of the Feast of Novello, our Chef Giacomo has prepared two heart-healthy dishes! Let's discover his recipes together!

Pasta and beans

Ingredients x 6 people:
- 400 g borlotti beans (dried)
- 4 medium potatoes
- 3 liters Water
- 1 clove Garlic
- 60 g Lard
- 1 carrot
- 1 onion
- 1 celery rib
- 1 sprig Rosemary
- 4 Sage leaves
- q.b. Salt and pepper- 200 g Pasta (chopped noodles)

Procedure:
Soak the beans for at least 10 hours.
Then prepare the sauté with celery, carrots, onion, garlic and herbs. Put it in the pot with a little oil and the chopped lard.
Then rinse the beans and add them to the sauté. Add the water and chopped potatoes, and finally season with salt and pepper.
After about three hours, remove some of the beans and set aside. Blend the rest of the mixture and finally add the whole beans.
In the meantime, cook the noodles separately and finally add them to the bean cream.
...and you're done!

Pumpkin and sausage pasta

Ingredients x 4 people:
-
Penne 320 gr.
- Delica or butternut squash 500 gr.
- Sausage 250 gr
- Extra virgin olive oil q.b.
- Fine salt to taste.
- Parsley to taste.

Procedure:
Wash the pumpkin, cut it in half and remove the seeds. Place it back in the oven with the peel at 160° for half an hour.
Meanwhile, take care of the sausages: peel them, cut them into small pieces and cook them in a pan.
Once cooked, remove the pulp and blend it with the help of an immersion blender, adding a little oil in a drizzle.
Finally, cook the pasta al dente and toss it with the pumpkin cream and sausage.
To taste, sprinkle with parsley.

Wine pairing: Novello IGT Veneto without added sulfites - new vintage 2023

A wine of tradition that marries innovation: it is, in fact, produced from Piwi vines, which are naturally resistant to the fungal diseases typical of vines and thus represent another step toward sustainability.

This wine, an emblem of tradition, becomes the ideal companion for convivial moments during autumn thanks to its smooth and harmonious flavor, in which hints of violets and red berry fruits such as blueberry, currant and blackberry prevail.

The dishes offered by our chef, served hot, will have an extra edge when paired with the Novello PIWI 2023, an autumn wine par excellence since it is the first wine to be drunk immediately after the harvest.
