"Food Pairing" - our Moscato "M-use" paired with a classic of Treviso cuisine: tiramisu

Delicious to enjoy at the end of a meal or as a snack, with very few wholesome ingredients and very easy to prepare: let's discover our Chef's Tiramisu.

Tiramisu is the fifth best-known Italian cuisine word abroad, the first for desserts. The meaning of the name comes from the Treviso dialect "Tireme su" meaning "lift me up," Italianized into Tiramisù.
The earliest records of this dessert lead us back to the peasant tradition of Treviso with the historic "Sbatudin": egg yolk mixed with sugar until it becomes a frothy cream. Cocoa was then added to the cream of this traditional offering over time. This is how the sweet Tiramisu evolved in the various homes and kitchens of Treviso, intrepreting the recipe in different ways until we arrive at the traditional Treviso recipe with the six main ingredients: cocoa, coffee, mascarpone, ladyfingers, egg yolk and sugar.

On the occasion of Tiramisu Day, October 1, our Chef Giacomo, fromOfficina del Vino, prepared Tiramisu from Cantina Pizzolato: let's discover his recipe together!

Ingredients x 8 people:
- 500 g mascarpone
- 5 egg yolks
- 6 tablespoons of sugar
- 1 tablespoon of our Amaretto liqueur from Nonna Giselda
- Savoiardi biscuits
- Mocha coffee
- Bitter cocoa

Procedure:
Prepare a mocha pot of coffee, and while it cools begin the preparation of the cream.
Whip the egg yolks until frothy, then add the sugar and Nonna Giselda's amaretto. Continue whipping until the mixture is smooth and white in color.
Soak the ladyfingers in the cooled coffee and then create the base of our cake. Spread a generous layer of cream. Alternate layers of coffee-soaked ladyfingers and cream as desired. Finally sprinkle with bitter cocoa. After chilling a few hours in the refrigerator...here is our cake ready to enjoy!
